The Concept of Omakase

Omakase, the choice of the true gastronomist.. Omakase literally means “its up to you” from the Japanese word 任す, entrust.
It is this principle of entrusting what to eat for your meal to the chef that guides our team to deliver to you the highest quality dining experience at reasonable prices.
Omakase dining is where customers entrusts the chef to decide what to serve and the menu is not fixed.
This concept is popular with Japanese patrons and Singaporean professionals who are looking to be relieved of decision-making over their meal and instead choosing to be delightfully surprised by the chef’s selections.

Celebrated my wedding anniversay at Hachi Restaurant and we chose the Ryu Omakase winter menu. Every dish was beautifully presented and the ingredients were fresh and well-prepared. Most impressive was the kegani hairy crab as the texture of the meat was delicate and sweet. The manager, Hirokazu, was very welcoming with his cheerful smiles and attentive service. We even received a specially designed anniversay dessert from the restaurant. A big thank you to Hiro and the team for making our evening so enjoyable.

Had the most amazing and authentic Japanese Omakase meal and Sake at Hachi this evening!

it's a very nice place to chill and relax. The food is abit salty but it's very good to come with sake, ume and beers. Friendly staffs with good knowledge on their products.

During our visit, there were 2 options for the omakase lunch and we opted for the seafood option ($168++). We also had a cup of hot, refillable green tea ($10++). We felt really well taken care of and appreciated the introduction of each dish. Every dish was delicious! The scallops were so juicy, the oyster was super fresh, the chawanmushi was flavourful, the sashimi (and seafood for all the dishes) was so so fresh and sweet. The wagyu beef paired with the grated radish (? Did not manage to catch what was it exactly but it’s the white shavings beside the spoon) was mind blowing! The radish’s flavour was so complex - sweet, floral, slightly sharp (less so than mustard or wasabi) and it paired so well with the soft, fatty and rich beef. Hence, the beef was both me and my partner’s favourite. I was also pleasantly surprised by the lightly torched Spanish mackerel (locally known as batang), as I never had it raw before! The torch on the fish skin was so yummy 🤤 The broth is reminiscent of fish soup in hawker centres, and I appreciated the light but flavourful broth. For deserts, to celebrate my birthday, the restaurant gave us complementary cheesecake to replace the red bean ice cream in the original menu. It was presented on a beautiful plate, with a music box and a card from the staff. The staff also gave us complimentary hojicha to pair with the sweets. I’m not a fan of the texture of beans and thought that the desserts can be more varied as both the wagashi and ice cream featured beans. Overall, a wonderful experience 🥰🥰🥰

The location within the National Gallery of Singapore is very convenient because after visiting an exhibition, you can treat yourself to a fantastic Japanese Omakase lunch or dinner. The service was very friendly, but the explanations of the different dishes were sometimes difficult to understand. I was seated alone at a long chef's table, which was a little awkward at first for a lone diner. But all in all, absolutely recommendable.

We had an unforgettable company lunch today at Hachi Restaurant. Service was tip-top, all of the staff were fantastic! Really feel so welcome. Every dish was like an art, so exquisite that you wouldn't want to eat it (but no choice had to eat it 🙂 Hirokazu Itoh-san went the extra mile to arrange cooked food for me who can't take raw food. Thank you Hiro-san for making this experience so wonderful! Please thank all of your staff on our behalf. HACHI Restaurant at the National Gallery is a hidden gem for lovers of authentic Japanese cuisine. Stepping inside feels like traveling to Japan, with its Edo-period-inspired decor, from the large red lacquer tray at the entrance to the lucky doll on the wall. The attention to detail is impeccable, even down to the mirrors that allow diners to watch the chefs at work. The Omakase menu is a true culinary journey—standouts include the melt-in-your-mouth A5 Omi beef, rich and flavorful sashimi, and grilled eel paired with crispy burdock chips. The sea urchin eggplant and tiger prawn are perfect examples of seasonal delicacies. Even the tempura, wrapped in shiso leaf and seaweed, offers a refreshing bite. The service is on par with Michelin-starred restaurants, ensuring every dish arrives at just the right moment. For an unforgettable dining experience with superb value, HACHI is an absolute must-visit.

The omakase was super good with a wide variety of seafood .The first dish had a mini garden plating which was super pretty and the chawanmushi was to die for and I loved the little details such as the cucumber frog in the bowl. The meal ended with a really good warabi mochi dessert which was perfect as I was super full by the end of the course. Service was amazing. Thanks Itoh-san for hosting me and my friend. Will definitely come back again

Went on a Tuesday evening, fairly quiet night. The moment you stepped into the restaurant, the restaurant manager Hirokazu greets you and gives you a warm welcome. We ordered the hachi omakase, oyster, and chutoro hand roll on the side. Each dish were meticulously prepared with fresh ingredient. I enjoyed the experience a lot and was surprised with one final take away dessert on your way out the door! I would recommend to try and I would come back again!

The most exquisite Omakase dinner I’ve had so far. There are 4 cooking zones in this luxurious restaurant working in unison to prepare our meal from sushi to meat to dessert. The attention to detail is impeccable. The ingredients are fresh. We chose the Hachi Omakase set at $318. mizunasu chilled mizunasu raw eggplant with extra virgin olive oil & sea salt flakes. hassun assortment of seasonal appetizers -mozuku vinegared seaweed with kisu konbujime & myoga. -amadai tilefish with shin-tamanegi onion sauce, menegi & wasabi chilled steamed corn with botanebi prawn, yurine & ankakke. -hotaruika firefly squid with 'sansai mountain vegetables of udo, warabi, asatsuki, kinome miso & apple vinegar jelly. temaki handroll of shiroebi white shrimp, hotate scallop, umibudou seaweed & tonburi 'caviar' agemono uni sea urchin stuffed in zucchini flower on edamame puree, roasted negi onion powder. sashimi chef's seasonal sashimi selection. suimono hamaguri clam in a magurobushi & clam broth, fresh seaweed yakimono charcoal grilled A5 wagyu beef with red wine salt & grated yamawasabi, truffle scented misozuke gindara cod accompaniments of sawagani river crab, soramame broad bean, satsumaimo sweet potato & eringi mushroom chips. sushi seasonal sushi with edo styled miso soup. dessert kakigori shaved ice with cream cheese, matcha green tea powder & syrup, azuki-an, kuromame black bean & mochi dango.

Went there on the 8th March 2024(Fri) for a dinner with my husband, located inside of the National Gallery. I would say this is a hidden gem and its totally worth a five star. If you are into Sashimi and don't mind Omakase. Atmosphere - There wasn't many people on that day, so we managed to book semi private room, and the venue itself really have the slight tradition but 5 star restaurant vibe. Service - A Japanese waiter who is well verse in English served us, and he was very patient and explained what are the dishes and how we should eat it, and show the what the fishes looked like with a book of fish pics which made it more easy to understand. He also was very attentive of my hot tea when its running low and ensure both my husband and I enjoyed the food. Food - Everything was great, especially the cod they have served. I chose the Ryu Omakase, but requested with no beef. They served us with the cod which was only available on lunch menu, but the waiter was very patient and explained to us on how it was cooked and what fish it was. There were many other great food which can't be explained with words but with pics instead. Overall, I highly recommend, if you are looking for somewhere to celebrate anniversary, or a normal date night, here is the place to go!

Weekday Lunch hour/ Omakase set Atmosphere: Tranquill Service staff: kind and pays attention to detail. They offered a box to place my bag, a shawl if i were cold, and even re-adjusted my cutlery when they noticed I was left handed!! Amazing! 1st restaurant staff to have ever done so 👏 Food: Fine attention to detail and flavour. Food displays were amazing and the flavours all came together beautifully. Food were all SO fresh, made my mouth feel like i was on cloud 9. Loved my experience there, thank you all so much 💗
